Our whites lean toward Burgundy, the Loire and Riesling from Germany and Austria, with plenty of good bottles under $30. At the top end: Puligny-Montrachet, Joh. Jos. Prüm Kabinett and Spätlese, Wachau Smaragd and Jura from Arbois. For weeknights: Petit Chablis, Sancerre, Alsace Gewurztraminer, Vinho Verde and Marlborough Sauvignon Blanc.
