Boyer De Bar Sauvignon Blanc 'La Glaciere' 2025

Vincent Boyer is the fourth generation to run Domaine Boyer-Martenot in Meursault, and Boyer de Bar is the project he launched in 2018 with Emmanuel Lucas De Bar, a friend from winemaking school whose family owns vineyards in France's Hérault Valley on the site of a 12th-century monastery. The premise: organically farmed fruit, picked by hand and vinified in Vincent's own cellar, at a price meant for every day. La Glacière is pure Sauvignon Blanc from vines more than 25 years old on clay and limestone, fermented with indigenous yeasts and kept entirely in stainless steel, with no malolactic conversion to soften its edge. Lemon zest, white flowers, and orchard fruit lead into ruby grapefruit and a salty, crushed-stone minerality. Chill it hard and pour it with oysters, goat cheese, or nothing at all.
