Roca Altxerri is made at Bodegas Zudugarai, Mikel Errasti's family winery in Aia, in the Basque province of Gipuzkoa. The fruit comes from two hectares of Hondarrabi Zuri on seaside hills picked for their sun and wind, which keep the grapes dry and clear of rot. It takes its name from a cave in the same town: Altxerri, whose paintings rank among the oldest in Europe at roughly 39,000 years. Hand-picked and vinified entirely in stainless steel, the wine carries the Getariako Txakolina appellation, named for the nearby fishing town of Getaria. The 2025 has the soft spritz txakoli is known for, with cut grass and blossom on the nose and melon and grapefruit on a dry, brisk palate, all at a light 11.5 percent. Chill it hard and pour it alongside anything that came out of the Bay of Biscay that morning.
