Mukhamtsvane is one of Georgia's less familiar white grapes, a thick-skinned variety that the family-owned Kapistoni winery, based in Saguramo north of Tbilisi, draws from vineyards around Kareli in central Kartli, at about 750 meters on limestone and clay. Winemaker Niko Chochishvili lets it ferment on the skins with native yeasts in qvevri, Georgia's buried clay vessels, then ages it there for six more months, moving the wine by hand from one vessel to the next to leave skins and sediment behind. The 2022 is a medium-dark amber, with ripe orchard fruit, yellow plum, and orange peel up front and walnut, honey, and a floral note behind them; the palate is dry, its tannins giving shape to stone fruit on a long finish. It is built for the table: roast duck, pork, or a wedge of aged cheese.
