Three friends, Giambattista Cilia, Giusto Occhipinti, and Cirino Strano, founded COS in 1980 in Vittoria, in Sicily's southeast, naming it for the initials of their surnames. The estate is known for its amphora-raised Pithos wines, but Rami takes another route: equal parts Grillo and Insolia from the Fontane and Bastonaca vineyards, organically farmed on red, sandy soils of limestone and silica. The hand-harvested grapes ferment in concrete with native yeasts, spending five to seven days on their skins, and the wine ages there another eight months. The 2025 opens on pear, white blossoms, and a stony edge, then turns silky and textured, with ripe stone fruit, a hint of spice, and a squeeze of citrus before a nectarine finish. Give it a light chill and a plate of grilled fish, and the bottle takes care of the rest.
