Niko Chochishvili's grandfather made the wine his town wanted at weddings and baptisms, because he watched over his fermentations to keep them clean. The craft passed through Niko's father to him, and at Kapistoni's Saguramo winery he makes everything in buried qvevri, clay vessels Georgians have trusted for some 8,000 years. Mukhamtsvane, a Kartli white the winery set out to showcase, sits on its skins through a native-yeast fermentation, then is racked by hand between vessels, shedding first its skins and later its sediment. Dry, with a frame of tannin, it shows ripe pear and apple, yellow and white plum, and a scrape of orange zest; honey, walnut, and blossom sit underneath, and the finish is long. Kapistoni holds, as its forebears did, that wine has memory: give this one a dinner worth remembering.
