Ochota Barrels became one of Australia's defining natural wine labels under Taras Ochota, and since his passing his wife Amber has run both vineyards and cellar, keeping the house faith: low intervention, high feeling. Texture Like Sun takes its name from a line in Golden Brown by The Stranglers, the song the two danced to at their wedding. The 2023 draws on roughly 60 percent Adelaide Hills and 40 percent McLaren Vale fruit, Gamay and Grenache in the lead with Pinot Noir for elegance and a flicker of Gewürztraminer for texture, its skins added to the Pinot ferment. Hand-picked bunches are cold-soaked, fermented on native yeasts in small open-top vats, hand-plunged, basket-pressed to old French barriques, and bottled unfined with a scant dose of sulfur. The style is juicy and supple: serve it with a light chill and drink it outside.
