Kapistoni is a family-owned winery in the village of Saguramo, in Kartli about half an hour north of Tbilisi, and it takes its name from a word the family's grandfather coined for his most exceptional wines. Winemaker Niko Chochishvili emigrated to the United States and served as a US Army captain before retiring early and returning to Georgia to carry on his family's winemaking tradition. The grapes come from ecologically farmed vineyards in central Kartli, and every wine ferments and ages in qvevri, clay vessels buried in the earth, with native yeasts and no oak or stainless steel; the wine is clarified by racking it from one qvevri to the next. Tavkveri, a native Georgian red grape, spends seven to eleven days fermenting on its skins, then six to eight more months maturing without them. Wild blackberry, blueberry, and cherry lead, with a touch of black pepper, a floral lift, and powerful yet polished tannins through a long finish. A natural partner for grilled meat, and a vivid first taste of Georgian red wine made the ancient way.
