Florent Cosme's family has made wine in Vouvray for generations, but its vineyards went to his older brother Mathieu, so Florent built his own domaine from scratch. While managing vineyards for Vincent Carême, he gathered old-vine parcels on the Première Côte at Noizay, worked them on nights and weekends, and made his first vintage in 2011. Grosse Pierre, French for “big stone,” is organically farmed Chenin Blanc from a south-facing site where vines over four decades old grow in clay and flint over limestone. Native yeasts ferment it, and it ages in large older barrels. Dry and bright, it brings pomelo and lime zest over apple, with a touch of flint and a taut, refreshing finish. Set out a log of Sainte-Maure de Touraine, the local goat cheese, and let the neighbors get acquainted.
