The Fabiano family began selling its wines in Venice in 1912 and moved inland to the Verona countryside in the 1950s; today Alessandro Fabiano, the fourth generation, runs the house at Sona, and its Amarone has been in the range since 1966. Corvina and Rondinella are dried for about four months in the traditional appassimento before a long maceration of roughly thirty days, and the wine then rests thirty months in large Slavonian oak casks. Deep garnet-tinged red, it offers red fruit and subtle spice on the nose and an intense yet elegant palate, its tannins balanced by real acidity. Amarone asks commitment at full size; this half bottle delivers the dried-grape depth in a dose two people can finish with the cheese course.
