Cayeya keeps its reposado honest: single estate blue Weber agave harvested at six to eight years, cooked in masonry brick ovens, milled and fermented in stainless steel, rested six months in a combination of American and French oak, and bottled at 80 proof with no additives. The French oak is the signature move, threading a floral lift through an aroma of toasted vanilla, caramel, toffee, and butterscotch. The palate follows with creamy vanilla, toasted coconut, and baking spice, cinnamon and nutmeg with a pinch of clove, before oak frames a finish of lingering vanilla, caramel, and a hint of dark chocolate. A reposado for drinkers who like the barrel to speak up without shouting over the agave.
