Silks is named for the racing colors worn by the jockeys at Bellewstown, a racecourse within sight of Boann Distillery in County Meath's Boyne Valley. The Cooneys, a family with over two centuries in the valley, opened the distillery in 2019, and the gin's signature botanicals come off their own land: apple blossom from 6,500 orchard trees, elderflower and hawthorn blossom from the hedgerows, and honey from the family hives. Fourteen botanicals steep for a day before a slow run through a 500-liter copper pot still, with a vapor chamber saved for the delicate Irish ones. Citrus and pine lead, florals sweeten the edges, and orange zest, apple, and blossom settle over firm juniper before a long, honeyed finish. The idea for Silks came from a swarm of bees on a neighbor's farm gate, driven home to pollinate the orchard. The house serve is a gin and tonic with a slice of red apple.
