Scarpetta is the Italian label of Master Sommelier Bobby Stuckey and chef Lachlan Mackinnon-Patterson, the pair behind Frasca Food and Wine in Boulder, and Frico Rosso is its everyday Tuscan red. Sangiovese leads, rounded out with small doses of the native Canaiolo, Ciliegiolo, and Colorino, and it drinks exactly as designed: crisp, tart cherry fruit with the dried-herb savor that marks proper Tuscan reds, built for the table rather than the cellar. The producers point to grilled meats, salumi, and hard cheeses; pizza night will not object. Fare la scarpetta, after all, is the Italian custom of mopping the plate with bread.
