Johannes Davaz grew up among his family's Pinot Noir vines in eastern Switzerland before buying Poggio al Sole in 1990, an isolated farm at Badia a Passignano in the high hills of Chianti Classico; his son Valentino and daughter-in-law Stephanie joined in 2019. Three decades of Swiss precision show: the estate is certified organic, its galestro slopes face every direction, and the highest vineyard tops 1,600 feet, altitude that means a longer road to ripeness, buoyant acidity, and complete phenolic maturity. The Chianti Classico is 90 percent Sangiovese with 10 percent Canaiolo from vines around 25 years old, fermented in stainless steel over a 12 to 16 day maceration and rested a year in used oak to keep the fruit fresh and the aromatics clear. In half bottle, real Chianti Classico pedigree scaled to a single dinner.
