Domenico Canale founded his Memphis wholesale house in 1866 and sold a whiskey there called Old Dominick. After an unopened Old Dominick bottle from the late 1800s surfaced, his great-great-grandchildren Chris and Alex Canale revived the brand, and in 2017 their South Front Street distillery turned out the first whiskey legally distilled in Memphis since Prohibition. The Straight Bonded starts from the house mash bill of 75% corn, 13% rye, and 12% malted barley, distilled in a single season, filtered through sugar maple charcoal, aged at least four years in heavy-char West Tennessee white oak in a bonded warehouse, and bottled at 100 proof without chill filtration. Vanilla, anise, and tobacco lead, crème brûlée and caramel fill the middle, and the finish turns to oak while staying silky. Domenico put a Dominicker rooster on the label of his Toddy cordial in 1880; the bird is still on this one, strutting like it knows what's inside.
