Niizawa Brewery was founded in Miyagi Prefecture in 1873, and in 2002 Iwao Niizawa, the family's fifth generation, created Hakurakusei as his "ultimate food sake": low in sugar and made to let food shine. After the 2011 earthquake destroyed three of its buildings, the brewery moved its brewing to the mountain town of Kawasaki. This tokubetsu junmai, a "special" grade of pure rice sake, uses Yamada Nishiki rice flat-polished to 60%, a method that strips out off-flavors and keeps the rice's umami. Melon and stone fruit lead, the body stays light, and a bright citrus edge snaps the finish clean; it is as good chilled as it is warm. The name borrows Hakuraku, the master horse judge of Zhou-dynasty China, and the brewery hopes whoever drinks it shares his eye.
