Method founder Cory Fitzsimmons ran the bar at Union Square Cafe before deciding New York deserved a serious vermouth of its own, and three years of blind tastings of botanicals, base wines, and trial recipes produced this one. Styled after the classic sweet vermouths of Turin but built entirely from New York State material, it rests on Finger Lakes Valvin Muscat and Cayuga White fortified with brandy from Finger Lakes Distilling, then layered with 29 botanicals: wormwood, orris root, bitter orange, chamomile, Dittany of Crete, hyssop, cassia, clove, and Madagascar vanilla among them. Brûléed citrus, marzipan, and cinnamon on the nose give way to cola, bitter orange, dark cherry, and fennel, closing on wormwood, cacao, and sage. Bottled in Romulus, New York at 18 percent, it was born for Manhattans and drinks just as well over ice with a twist.
