Equipo Navazos began in 2005 when Eduardo Ojeda, technical director of Jerez's Grupo Estévez, and Jesús Barquín, a criminology professor at the University of Granada, started bottling exceptional casks from the region's great bodegas; their numbered La Bota series, named for Poe's Cask of Amontillado, remade how the world drinks sherry. This half bottle brings that approach to an everyday fino: Palomino Fino from the Cartera and Macharnudo Alto vineyards just northwest of Jerez de la Frontera, hand-harvested, fermented on indigenous yeasts, fortified to 15 percent, and aged an average of five years under flor in solera. Bottled en rama with only the lightest filtration and no cold stabilization, it keeps the color and depth most finos lose: pungent and lively, complex and comparatively rich. Serve cold, drink fresh, repeat.
