From their base in Cravant-les-Côteaux, prime Cabernet Franc country in the Loire, Philippe Alliet and his son Pierre run one of Chinon's benchmark domaines, and this straight Chinon is the most direct way into their style. Vines more than 45 years old grow on sand and gravel left by the Vienne, farmed organically and cropped at a low 25 hectoliters per hectare. The fruit is fully destemmed to keep the grape's leafy side in check, then fermented with native yeasts, aged in concrete, and bottled unfined and unfiltered. Violets and blue fruit lead into a juicy, savory palate with a stony edge and a peppery finish. Braised beef, roast chicken, a board of charcuterie: it shows up for all three and makes a convincing case for drinking Alliet young.
