Meursault is Chardonnay country, but Domaine Jobard-Morey makes its Aligoté the same way it makes its Meursault. The family estate dates to 1949 and is now run by Valentin Jobard, grandson of the founders, who farms with biodiversity and soil health in mind. The fruit comes from the lieu-dit Sous le Chemin, whose rich soil puts a strong stamp on the grape. Gentle pressing keeps it fresh, and after fermentation in barrel it rests on fine lees that build richness and weight into a layered, balanced white. Put out a plate of warm gougères and let it start the evening.
