Disznókő is one of Tokaj's historic estates, a single south-facing hill in the Hungarian region best known for its botrytised sweet wines, and its name, meaning the rock of the wild boar, comes from the volcanic outcrop at the vineyard's heart. This is the dry side of that legacy: 100% Furmint, Tokaj's flagship grape, grown on volcanic clay studded with perlite and sheltered from the northern winds by the Zemplén hills. The fruit is whole-bunch pressed without destemming, fermented cool in stainless steel with no malolactic, then rested on its fine lees in tank to build texture while preserving cut. Pale straw with green glints, it leads with green apple and grapefruit over pear, stone fruit, and a brush of almond and green herbs, the palate saline and rounded with a mineral, savory finish. A precise, thirst-quenching counterpoint to Tokaj's sweeter reputation.
