After studying viticulture and enology in Dijon, David Moreau worked alongside growers at Château de Beaucastel, Domaine Hubert Lamy, Domaine de la Romanée-Conti, and Neudorf in New Zealand; in 2009 he took over the Santenay domaine his grandparents Simone and Jean founded in 1959. Dalle Nacrée takes its name from the dalle nacrée, a Middle Jurassic limestone beneath two of its three parcels, En Boichot and Les Prarons, while the third, Les Champs Claude, sits on colluvial and alluvial deposits from the Dheune. Moreau follows organic principles without seeking certification, picks by hand, and ferments in concrete with about 10 percent whole clusters and native yeasts before a year in barrel, 15 percent of it new. The wine is fresh and generous, with red fruit and a floral perfume of roses set on a firm, well-built structure. Village Santenay from the southern Côte de Beaune that drinks well young and will hold through the end of the decade.
