Maneki Wanko, a canine riff on Japan's beckoning lucky cat, brews this junmai genshu in Nada, the storied sake district of Hyogo Prefecture, home to Miyamizu, the mineral-rich water that made the region famous. Hitomebore rice milled to 70 percent goes in, and nothing gets watered down on the way out: genshu means undiluted, so it ships at its full 13.2 percent fermentation strength. Soft, light, and creamy on the palate, with stewed cherry, cooked rice, and grape, neither too sweet nor too dry. In Japan the 180ml sake pack is standard gear for park picnics and the train ride home; consider that a serving suggestion.
