Order a vermut in a Catalan bar and it usually comes red, poured over ice with an orange slice and a couple of olives, a bowl of potato chips on the side. Timbal is made in Catalonia by Emilio Miró, a house founded in 1914 and based since 1957 in Reus, a town whose vermouth trade once rivaled Torino and Chambéry. The rojo is round, with a bitter streak of wormwood up front and its sweetness kept in check, easy to sip on its own. Stir it into a Manhattan with high-proof rye and it brings out baking spice and adds body without piling on vanilla or caramel. Keep it in the fridge once open, though at 500ml it won't be in there long.
