Dario Serrentino left social work to farm full time and has bottled his own Mortellito wines since 2014 in the Val di Noto, at Sicily's southeastern tip. Cala, made for PortoVino's Fuso line of everyday wines, is his take on the opposite corner of the island: certified organic Catarratto from a plain about 400 meters up near Partinico, west of Palermo, on clay and red sand, picked early to keep the acidity bright. It ferments with native yeasts in stainless steel and spends 50 hours on its skins, enough to put it right on the line between white and orange wine, then rests six months in tank before a light filtration. Stone fruit, cantaloupe, and citrus peel lead, with dried flowers and a hint of sandalwood behind them and a saline streak through the finish. Chill it well, pour it with grilled fish or a spread of antipasti, and keep a second bottle cold.
