Helix 7 begins as winter wheat in France's Champagne region, where it is column distilled seven times, then heads north to Reykjavík, where Wanderlust Spirits marries it with Icelandic glacial water so naturally soft and alkaline it reads pH 7.4; the name nods to that double-stranded pairing of French grain and Icelandic water. The nose offers sweet cream, marzipan, and strawberry, the palate echoes the confection with vanilla, lemon zest, and a faint note of apricot kernel, and the finish is crisp and clean at 40 percent.
