The gentler of the two great Chartreuses, Yellow was introduced by the Carthusian monks in 1840 and follows the order's secret formula of 130 plants, flowers, bark, roots, and spices, known in full to only two brothers at the Grande Chartreuse monastery. The monks blend the botanicals at the monastery, distillation happens at Aiguenoire in Entre-deux-Guiers, and the liqueur takes its deep golden color naturally from the plants before resting at length in oak. Bottled at 43 percent, noticeably softer than its green sibling, it shows a nose that is fresh and spicy at once, turmeric, citrus, and a light thread of anise, with floral notes carrying the flavor long. A cocktail ingredient since the 19th century and a digestif by vocation; serve it lightly chilled or on ice.
