Pinhook treats bourbon the way a négociant treats wine: as a vintage, blended new each year from the barrels at hand rather than reverse-engineered to a fixed house profile. The 2025 release was distilled at Castle & Key in Frankfort, Kentucky from a mash of 75 percent corn, 15 percent rye, and 10 percent malted barley, aged over three years in char #4 new American oak, then assembled by co-founder Sean Josephs, proofed to 100 with limestone-filtered spring water, and bottled without chill filtration. The nose runs to lush tropical fruit under honey and caramel with a soft glazed-doughnut sweetness; the palate warms into clove, graham cracker, and cinnamon. Drink it neat or spend it freely on Manhattans; next year's blend will be different, and that is the point.
