La Gritona in miniature: fifty milliliters of the reposado Melly Barajas and her all-women crew, jimadoras through distillers, make at a small distillery in Valle de Guadalupe in the Jalisco highlands. Barajas insists on agave matured eight to ten years in the region's iron-rich red soil, steam-cooks the piñas for a full day in earthen ovens, ferments naturally in open steel vats, and double distills before resting the spirit six months in well-traveled American whiskey barrels; the casks are reused until they have almost nothing left to give, which is precisely the point. The result still tastes like agave: herbaceous and vegetal on the nose, light on sweetness through the palate, crisp at the finish, with none of the vanilla-caramel padding of the typical highland style. Additive-free, as it has always been, and sized for a proper introduction.
