The Pasquero-Elia family has farmed the Serraboella hill in Neive since 1796 and first bottled under the Barbaresco name in 1893. Sorì Paitin comes from the steepest, warmest flank of the cru: in old Piemontese, a sorì is the slope where winter snow melts first, the ancient test for siting Nebbiolo. Vines planted between 1953 and 1980 face southwest at 280 to 320 meters in the sand and marl strata of the Lequio formation, whose active limestone builds volume and tannic firmness into the wine. Fermentation and maceration run three to six weeks in stainless steel, finishing under a submerged cap, before eighteen months to two years in 25- to 50-hectoliter Slavonian and Austrian oak. Power and volume held in an elegant frame; Neive Barbaresco from a family with two centuries of practice on this hill.
