Mature red Burgundy almost never surfaces at village level, which is exactly the appeal here. Domaine Jouard is a Chassagne-Montrachet family estate now in its seventh generation; Paul Jouard, trained in Beaune, has run it since 1992, farming 10.5 hectares split between Chassagne and neighboring Santenay, with reds at the heart of the range. Everything is picked by hand, and in the cellar the fruit moves by conveyor rather than pump, with long macerations coaxing depth from Pinot Noir. This Vieilles Vignes bottling comes from old vines in Santenay, and the 2011 arrives with some fifteen years of bottle age already behind it, maturity most Santenay is never given the chance to reach. The cellaring has been done for you.
