Denis Bachelet works barely more than four hectares in Gevrey-Chambertin, and his hand-bottled wines are among the most sought after in the Côte de Nuits. This Bourgogne Rouge comes from two southeast-facing lieux-dits on clay-limestone soils, Pressonnier in Gevrey itself and Grand Champ, with vines planted in 1977 and 1986 and farmed without herbicides or chemical fertilizers. The cellar work is patient and exact: full destemming, a cool pre-fermentation maceration, fermentation on ambient yeasts, then 16 to 18 months in used barrels before bottling by hand, unfined and unfiltered. Regional on the label, Bachelet in every other respect. Proof that in Burgundy the producer outranks the postcode.
