David Moreau is a young winemaker based in Santenay, Côte de Beaune, Burgundy. He tends to 5 ha in Village and 1er Cru Appellations of the family vineyard, taking care of both the vines and the environment in order to produce great quality wines that reflect each Terroir. Sustainable viticulture requires more constraints than classic grape-growing, but is safer for both human beings and nature.
From multiple parcels planted in the 1960's: 'Les Champs Claudes' ; 'En Boichot' ; and 'Les Prarons'. 10% whole cluster with gravity transfer to concrete tank. Ambient yeast fermentation with no added SO2, one punch-down daily until mid-fermentation and one pump-over daily until the end of maceration. Aged for 12 months in barrels (15% new).
Features a direct nose with the fine perfume of whole-cluster roses. On the palate, expect tart cherry, tea leaves, smoke, and spice, wrapped in a silky texture with medium-plus acidity.
