Terre di Marca was the first organic label from the Corvezzo family, who have farmed in Cessalto, in the province of Treviso, since 1955 and moved their vineyards to organic viticulture under Giovanni Corvezzo, the third generation. This is Prosecco made the old way: Glera refermented in its own bottle and never disgorged or filtered, so the spent yeast settles at the base of the bottle. That sediment gives the style its name, since col fondo means "with the bottom." The sticker on the bottle says "Shake it!", and a gentle turn of the bottle before pouring folds the lees back in for a cloudy glass. Apple and pear blossom lead, followed by salty lemon and wild herbs, a silky texture, and fresh acidity. Light at 10.5 percent alcohol, it is a natural partner for pizza, seafood, and salty snacks.
