Scarpetta Frico Lambrusco Can

Scarpetta, the Italian label from sommelier Bobby Stuckey and chef Lachlan Mackinnon-Patterson, cans Emilia-Romagna's signature fizzy red as Frico Lambrusco, a blend of Grasparossa, Salamino, and Maestri. Dark ruby with fine, shimmering bubbles, it opens on red currant and strawberry, follows with plum, raspberry, and pomegranate, and resolves a touch of upfront sweetness into a tart, dry, lightly spicy finish. Lambrusco is the quintessential aperitivo of its region, and 250ml of it, served cold next to something salty, needs no further defense.
