Jean-Marc Brocard planted his first vines at Préhy in 1973 and built one of the major names in Chablis; his son Julien joined in 1995 and began working biodynamically in 1997, and today the house is among the largest organic growers in Burgundy. This Crémant de Bourgogne is Chardonnay grown on Kimmeridgian limestone, fermented with native yeasts, taken through full malolactic fermentation, and raised in stainless steel before extended time on the lees. It is bottled as a Brut Nature, with no dosage at all, so nothing masks the fruit or the limestone. White flowers and citrus rise over a lively, delicate mousse, and the palate is focused and crisp, with orchard fruit and a fine mineral line running through a clean finish. Bone-dry and precise, and a natural opener for oysters or a plate of gougères.
