Diebolt-Vallois Blanc de Blancs 375ML

Diebolt-Vallois is a family house in Cramant, a Grand Cru village in the Côte des Blancs, and its non-vintage Blanc de Blancs is all Chardonnay, built mainly on fruit from the Premier Cru village of Cuis, with Épernay and neighboring sites rounding out the blend. Vinified in stainless steel and blended with reserve wine from earlier vintages, it is finished Extra Brut with a very low dosage. Green apple and lime lead, with a touch of pear and a chalky mineral line carrying a fresh, lively finish. This half bottle holds just enough for two people and a dozen oysters.
