Claus Preisinger has been making wine in Gols since 2002, farming 19 hectares near the north shore of Lake Neusiedl in Burgenland, biodynamic since 2006 and certified by respekt-BIODYN, and he has become one of the most recognizable names in Austrian natural wine. Ordinaire is sparkling by the ancestral method rather than a traditional Sekt: a rosé pét-nat, bottled before the first fermentation finishes so it completes in the bottle, keeping a fine natural sparkle, with nothing filtered out and no sulfur added. Pinot Noir anchors a blend whose supporting variety shifts with the release, and alcohol sits around 11 percent, which is exactly the point. Strawberry and redcurrant with a touch of spice and a bright, frothy lift. The name undersells it.
