La Cueille is made in the méthode ancestrale: a single fermentation, cut short by bottling before the sugar finishes converting, that continues quietly in the bottle and builds its bubbles there rather than through a second dosage. The blend is eighty percent Gamay and twenty percent Poulsard, and the result is a pale, deep pink wine at just eight percent alcohol, its aromas of alpine strawberry and rose carrying through a touch of residual sweetness to a crisp, mineral, almost crystalline finish.
